Earth Fare: Free Pound of Shrimp

That gets me thinking. Does anyone have a yummy and easy (you should all know my cooking abilities by now) meal idea or holiday appetizer that would put this shrimp to good use?

  1. I use pre-cooked shrimp in making jumbalaya. 1 box of Zataran's Black Beans and Rice. Chicken cut into bite size pieces. Johnsonville Smoked Sausage sliced. Cooked Shrimp. (as much or as little of each meat as you prefer. For husband and I we cook 2 pieces of chicken, half a link of sausage and a pound of shrimp)

    Make the Rice per directions. In skillet fry sliced sausage. Remove sausage and drain fat. (i usually wipe down my skillet to remove most of the grease). In same skillet, fry chicken until cooked. Add sausage and shrimp back to the chicken until warmed. Then serve over rice.

    So easy and is usually a weekly regular at my place.

  2. Here's the easiest recipe:
    1 block cream cheese (put on a nice plate)
    dump jar of cocktail sauce on top
    chop shrimp and sprinkle on top
    Serve with crackers (ritz are good)

    Since this shrimp is already cooked, it's best not to follow any recipes that require you cook it further. You could either defrost and serve with cocktail sauce or warm it minimally in butter on the stove. That's how my boys like it.

    By the way, I went to Earthfare tonight and they've sold A LOT of shrimp today. I'd suggest you get there tomorrow if you want the deal.
