Pumpkin Cupcakes with Pumpkin Spiced Cream Cheese Frosting-Our Afternoon Project

My friend Mia made these Pumpkin Cupcakes with Pumpkin Spiced Cream Cheese Frosting a few days ago and gave one to THE HUSBAND. He has been talking about them since, so Mia sent me the recipe and  today the boys and I spent some time trying to make them.

Ingredients:

Cupcakes:
18.25 oz Duncan Hines Super Moist Cake Mix (yellow, vanilla, white)
2 tsp pumpkin pie spice
1 cup canned 100% pure pumpkin
1 cup water

Pumpkin Cream Cheese Frosting:
8 oz. 1/3 fat cream cheese (do not use fat free)
1/2 – 3/4 cup pureed pumpkin (basically, the rest of the can)
1 tsp vanilla extract
1 tsp cinnamon
1 tsp pumpkin pie spice
5-6 tbsp packed brown sugar (depending on how sweet you like it)

Directions:
1. Preheat oven to 350°
2. Line a cupcake tin with cupcake wrappers
3. Combine cake mix, pumpkin spice, pumpkin puree and water in a large bowl and mix about 2 minutes
4. Fill 24 cupcake liners evenly and bake about 20 minutes or until a toothpick inserted comes out clean
**Makes 24 cupcakes

For the frosting, combine the cream cheese, pumpkin puree, vanilla, cinnamon, pumpkin pie spice and brown sugar until smooth – use a spatula to ice the cupcakes

The boys loved making these. They are easy and I let them taste the batter this time because there are no raw eggs involved. They liked eating them too.

I discovered I still really don’t like cream cheese frosting. I know, I know but I don’t like cheese cake either. I will let you know what THE HUSBAND thinks when he tries them.

  1. You could do a glaze made from powdered sugar and orange juice that would be equally tasty!!

  3. I wanted to tell you that I have made your pumpkin muffin recipe twice, and my family loves them. My 9yo is a very picky eater, and asked me to make them again this weekend. Thank you for posting it. I just got done eating one for breakfast.
