Easy Dinner Recipes

Last week on Coupon Katie Facebook page I asked if any of you had good ideas for easy, yummy dinner recipes that would feed family that was coming to town to visit. I did not want to spend a lot of time in the kitchen but I wanted something good.

I was so impressed by your ideas! Thanks to everyone who took the time to respond.  I thought I would share a few of them now and a few next week. We all need some dinner inspiration every now and then right?

Chicken Pockets (They are so yummy.)
Crescent Rolls, Cooked Shredded Chicken Breast, 8ozs of cream cheese, cheddar cheese.

Mix everything but the crescent rolls all together, it will make a thick mixture, I always add lots of cheddar so they are gooey and cheesy!

Plop some of the mixture in the middle of a stretched out crescent roll and than fold the roll over so that you close up any open “holes” you don’t want the mixture to leak out everywhere when it cooks.

Bake them according to the directions on the package (it doesn’t take as long for them to cook though so watch them so they don’t burn) When they are done they turn golden brown. Thanks, Megan

Easy Mexican Lasagna
In a 9×13 dish make two layers, each layer in order, starting with salsa, two soft tortillas, taco flavored cooked ground beef, cheese queso, and shredded cheese. Top layer with two tortillas and more shredded cheese. Cook at 350 for 15 minutes or until bubbly. Thanks, Rose

Mu Shu Chicken Wraps
Stir fry broccoli slaw, carrots and green onions. Add pulled rotisserie chicken and sliced napa cabbage. Stir in hoisin sauce, plum sauce, sesame oil, garlic, and black pepper. I take the whole wok to the table and then spoon out the mix into flour tortillas. The kids love it! Only one wok dirty! It’s healthy! Thanks, Sarah

Crock Pot Beef Roast
In crock pot put beef roast, 2 cans cream of mushroom soup and a packet of dry onion soup mix. Cook 7-8 hrs then serve over egg noodles! Wonderful & Easy! Thanks,Raquel
