Easy, Yummy Peanut Butter Chocolate Chip Energy Bites


Four boys eat a lot of food when they are home for the summer.

This is a fact.

I was running out of options yesterday after karate so I threw together a bunch of stuff from our pantry and made some really yummy energy bites. Here is what I did, but know you can throw all sorts of things into theses babies and they will still be good.


1/2 c Peanut Butter
1 Ripe Banana smashed (not banana bread ripe, but close)
3/4-1c Oats (I didn’t want to dirty another measuring cup, that’s why the range)
1/4 c Milled Flax seed (again approximate, and not essential if you don’t have it)
1/2 tsp Vanilla
1/4 tsp Salt
1/4 c Mini Chocolate Chips

Mix all this together in a big bowl.

Place bowl in the fridge for about an hour and it will form into balls with out sticking to your fingers (as much).

Taste your creation, because it is yummy.

Form into balls then, throw them back in the fridge if you’re eating them in the next day OR place them on a cookie sheet and freeze for an hour before putting them in a ziploc bag OR if you don’t care that they stick together place them in the freezer in a ziploc bag and be done. 🙂

These are great to eat out of the freezer or fridge. They are good, full of some good stuff (and some chocolate) and you know exactly what is in them. You can substitute or add things too. I have a friend that adds sweetness-to everything- with pitted dates.

Cocoa Dusted Almonds- Easy and SO Good

Cocoa-dusted-almondsHave you ever tried cocoa dusted almonds?  Oh. My.   I am in love.

They are easy to make and they are better than I expected them to be. You can find a plethora of Cocoa Dusted Almond recipes on Pinterest. I tried a recipe my friend told me over the phone. This was my first attempt so I have nothing to compare it to, nevertheless  I am calling it a success! Here’s how I made them:

About 1 tsp coconut oil
1 1/2 TBSP of unsweetened cocoa poweder
1 1/2 TBSP powdered sugar
1 cup Almonds (mine were salted, which makes them taste even better in my opinion)

Heat the oil on medium then add almonds. Stir them for 1-2 minutes just until they are coated in oil and warm. Put almonds in bowl. Sift cocoa powder and sugar over almonds and stir until they are all covered. Let them cool, then enjoy!

Store them in an air tight container. My friend said they would last for a week or two this way but I don’t think long term storage will be a problem in this house. 🙂

Add this free jar of pepperoncinis to a 2-3lb beef roast and put it in the crock pot until beef is fork tender and shreds easily.  Serve it on buns with provolone cheese. YUMMY!

You can add garlic or water and onion soup mix or some italian seasoning but this is delicious without all that!

Here it is. The LEGO cake anyone can make. How do I know anyone can make it? Because I made it. If I can, trust me, you can.

I started with a Pillsbury cake mix from the pantry- I am sure I grabbed it on sale at some point.  This was my sweet “helper”.


I was planning to make a 9×13 cake, cut out two rectangles, stack them and make a longer cake. However, I could find neither of my 9×13 pans. I know where I left one after Thanksgiving but the other is probably gone for good…. I had already made the batter and promised the cake so it was time to improvise. I used two square 8×8 pans. LEGOS can be square right?
*Note-there are no baking times for square 8×8 so I just use the round cake times and watched them closely. It was about 32 minutes at 350.

So most of you probably know this, but for my fellow non bakers, put a thin layer of icing on one cake then stack the other on top. You can also use the the icing to “glue” two Oreos together and then to the top of the cake.

Then  icing the cake. I tried making it blue. I may have needed a little more blue food color but I was afraid it would taste odd. SO, when you make your cake you can just do a better job. (It looks a little more grey in this pic then it really is.)

And there it is! The easiest LEGO cake ever. Hopefully, your icing will look smoother. I tried fixing it after I let it sit in the fridge for a bit. Do not do that. It only makes it worse.

Happy birthday to my 9 year old. Your mom is not a great cake baker, but she loves you very much.
